với hải sản tươi sống hoặc  chín, với rau và với một số gia vị (nhất là wasabi nếu là sushi hải sản). Sushi  có nguồn gốc từ phương pháp bảo quản cá bằng cách ủ vào trong cơm của khu vực  Đông Nam Á.&lt;br /&gt;Biển cả bao bọc bốn bề khiến ẩm thực của Nhật Bản là ẩm thực của  hải sản. Tuy nhiên, tất cả đều đọc là  sư-si như trong tiếng Việt. Có thể có lúc đọc là dư-si nếu được kết hợp với từ  khác. Nếu đọc theo âm Hán Việt thì là thọ ty.&lt;br /&gt;&lt;br /&gt;Thứ cơm trộn dấm để làm  sushi được gọi là sumeshi hoặc sushimeshi. Loại dấm để nấu thứ cơm này không  phải là dấm thông thường mà là dấm có pha chút muối, đường, rượu ngọt mirin, vì  thế gọi là dấm hỗn hợp awasesu. Dấm này chuyên dùng để chế biến sushi, nên còn  được gọi là sushisu. Cơm nấu xong (nấu không chín hoàn toàn như cơm bình thường)  được đổ ra một cái chậu gỗ gọi là tarai rồi trộn dấm vào. Vừa trộn vừa dùng quạt  tay quạt cho hơi nóng thoát bớt ra để giữ hương vị của dấm.&lt;br /&gt;&lt;br /&gt;Các loại hải  sản dùng để làm sushi gọi là tane. Đó có thể là cá ngừ, cá hồng, cá trình, cá  cóc, cá thu, tôm (nhất là thứ tôm mà người Nhật gọi là sakuraebi), mực, bạch  tuộc, các loại ốc biển, cua biển, v.v...&lt;br /&gt;&lt;br /&gt;&lt;/i&gt;&lt;/span&gt;&lt;b&gt;&lt;span class="Apple-style-span"  style="color:#FF99FF;"&gt;&lt;i&gt;Các loại sushi&lt;/i&gt;&lt;/span&gt;&lt;/b&gt;&lt;span class="Apple-style-span"  style="color:#FF99FF;"&gt;&lt;i&gt;&lt;br /&gt;Có  nhiều loại sushi, tùy theo cách chế biến. Hiện tại có khoảng 150 loại.&lt;br /&gt;&lt;br /&gt;*  Loại thứ nhất là sushi nắm, gọi là nigirizushi. Cơm sumeshi được đắp lên bằng  một một miếng tane. Ở giữa thường có &lt;/i&gt;&lt;/span&gt;&lt;span class="Apple-style-span"  style="color:#FF99FF;"&gt;&lt;i&gt;một &lt;/i&gt;&lt;/span&gt;&lt;span class="Apple-style-span"  style="color:#FF99FF;"&gt;&lt;i&gt;chút wasabi. Phía trên miếng  tane có thể có một chút gừng xay nhuyễn hoặc vài hạt hành xanh thái nhỏ. Loại  này phổ biến nhất.&lt;br /&gt;* Loại thứ hai là sushi cuộn, gọi là makizushi được cuốn  như các đồ ăn cuốn của Việt Nam, nhưng bên ngoài là lớp rong biển sấy khô.&lt;br /&gt;*  Loại thứ ba là sushi gói như bánh, gọi là oshisushi.&lt;br /&gt;* Loại thứ tư là sushi  lên men, gọi là narezushi. Sushi ủ trong một thời gian dài cho lên men.&lt;br /&gt;*  Loại thứ năm là sushi rán, gọi là inarizushi. Sushi tẩm xì dầu rồi rán trong dầu  sôi.&lt;br /&gt;&lt;br /&gt;Mỗi địa phương ở Nhật Bản lại có những nét riêng trong chế biến  sushi. Có thứ sushi, nhưng không làm từ hải sản và cũng không có sumeshi, mà lại  là trứng trộn đường rán lên.
